8-oz. Jamison Farm leg steaks (1 steak per serving)

tablespoons olive oil ½ cup chopped onion
1 medium tart cooking apple, peeled and chopped
1 teaspoon ground ginger
1 tablespoon Dijon mustard
1 teaspoon crushed thyme
½ cup red wine salt and pepper to taste
Heat
olive oil in medium sauté pan. Add onion and sauté until
soft. Add lamb steaks and continue to sauté over
medium heat. Add apple and remaining ingredients after
3 minutes. Turn steaks, stirring sauce, and continue cooking
for another 5-7 minutes until steaks are desired doneness.
Let rest in sauce and then serve.
